* 1 pkg. UNCLE BEN'S® Long Grain & Wild Rice Herb Roasted Chicken
* non-stick cooking spray
* 4 boneless skinless chicken breasts (6 oz.)
* 4 Tbsp. Dijon mustard
* 3 Tbsp. panko (Japanese breadcrumbs)
* 3 Tbsp. salt-free Italian herb spice blend (dried)
* 1 c. fresh button mushrooms, cut in half
* 2 c. fresh or frozen green beans
1. Prepare rice according to pkg. directions.
2. Apply coating spray to large nonstick pan and heat over medium-high heat. Top each chicken breast with 1 Tbsp. Dijon mustard.
3. Combine the panko breadcrumbs and dry herbs. Sprinkle mixture on top of mustard.
4. Place chicken in sauté pan, herb-crusted side down first. Sear for 2 min. and turn chicken over.
5. Reduce heat to medium and cook another 5 min. or until chicken is cooked through.
6. When chicken is almost cooked, add mushroom halves to pan. Steam green beans in microwave or stovetop.
